MEXICAN CASSEROLE

Ingredients

  • 1 cup Bisquick
  • ¼ cup water
  • 1 lb. ground beef
  • 1 pkg. taco seasoning mix
  • 2 medium tomatoes, thinly sliced
  • 2 jalapeno peppers, sliced
  • 1 cup sour cream
  • 2/3 cup mayonnaise
  • ¼ cup chopped onion
  • 1 ½ cup grated sharp Cheddar cheese

Directions

Preheat oven to 375 degrees.

Grease 8-inch square glass baking dish. Mix Bisquick and water until soft dough forms; pat into dish with floured hands, pressing ½ inch up sides.

Brown ground beef; drain. Add taco seasoning and ¼ cup water to ground beef. Cook and stir until liquid is absorbed. Spoon meat mixture evenly over crust.

Layer tomatoes and sliced jalapeno peppers over meat.

Mix together sour cream, mayonnaise, onion and 1 cup grated cheese. Spoon over tomato layer. Sprinkle with remaining cheese.

Bake at 375 degrees for 25 – 30 minutes or until edges are light brown.

Cool 5 minutes before serving.
